How many hours have we all spent scrolling through Pinterest for the perfect recipe to cook on Tuesday night in answer to the age old question "what's for dinner"? In this week's episode we're sharing some of our favorite weeknight meals that meet most, if not all, the criteria of cheap, healthy, quick, customizable, and tasty so you can spend less time scrolling and more time enjoying your family. Or your Netflix.

 

  • King Ranch Chicken
    • Tasty//cheap
    • For when you want to have leftovers and also channel your inner 90's housewife

 

 

  • Taco Salad
    • Tasty//cheap//quick//customizable
    • KA recommends using Catalina dressing, sour cream, tortilla chips, onions, ground beef, and lettuce
    • KB recommends adding kidney beans and cheese and maybe some creamy Italian 

 

  • Pork Fried Rice
    • Tasty//cheap//quick//customizable
    • Use your left over pork shoulder that you've seasoned to death and cooked in the crockpot, eggs, stir fry vegetables, and rice, throw in a skillet with some sesame oil, and add some soy sauce
    • Make it healthy by substituting coconut aminos for soy sauce and cauliflower rice for regular rice

 

  • Turkey Basil Meatloaf
    • Tasty//cheap//quick//healthy
    • Whole30 + Paleo approved + no chopping
    • Be warned, this isn't your typical meatloaf, it's very Italian and very delicious

 

 

  • One Sheet Chicken Vegetable Bake
    • Tasty//cheap//quick//customizable//healthy
    • Great way to use up whatever vegetables you have in your fridge at the end of the week.
    • Toss whatever veggies you have + cubed chicken breasts with EVOO S+P or whatever seasoning you like, pop in the oven for 20 minutes at 450 degrees, and enjoy. 

 

  • Green Chicken Enchiladas
    • Tasty//cheap//customizable
    • Substitute diced chicken breasts with shredded chicken you cooked in the crockpot, rotisserie chicken, or if you're disgusting, canned chicken.
